Grilled Pork Chops Apple Bourbon Chutney
Ingredients:
salt and pepper
barbecue seasoning
six apples, core removed & chopped into bite-size pieces
1/4 cup bourbon
1/2 cup brown sugar
1/4 - 1/2 cup butter
Preparation:
1. Season the pork chops with your favorite barbecue seasoning. Start your apples while you grill or cook on a cast iron until your level of doneness. Once done, let rest while you finish the apple bourbon chutney.
2. Put the apples into a pan with a half stick of butter. Sautee on medium until slightly softened. Add the bourbon and let it cook down until the apples are soft. Lower the temp to medium/low or low and add the brown sugar. Stir until a glaze forms. If you find it's too runny, add more brown sugar. If it's too thick, add a splash more of bourbon. You will know it's done once the consistency of the sauce is like a syrup for pancakes.
3. Take off the heat and serve immediately over the pork chops.
