Ingredients
- 6 slices thick sliced bacon, cooked and coarsely chopped, with fat reserved
- 2 Tablespoons grape seed oil
- 2 pounds sweet onions, halved lengthwise and thinly sliced crosswise
- 3/4 teaspoon smoked salt
- 1 1/2 Tablespoons cider vinegar
- 1 cup mayonnaise
- 2/3 cup sour cream
Instructions
Add reserved bacon fat to the bottom of a large skillet or Dutch oven over medium heat. Add oil to the bacon fat. When it shimmers, add the onions and salt.
Cook over medium to medium-low heat, stirring occasionally, until the onions are deep golden, 45 minutes to one hour. If onions start to stick, add 2 Tablespoons of water and stir completely; repeat as necessary.
Remove from heat, stir in vinegar, and cool completely.
In a bowl of a food processor, combine reserved bacon, sour cream, mayonnaise, and onions. Pulse 2-3 times for 5-10 seconds (or until desired consistency is reached) to combine. Transfer to serving bowl and chill for at least 1 hour.
Serve with chips, vegetables, or as a burger topping.
