Caramel Popcorn

Introduction

This peanut caramel corn is a homemade version of the world-famous crackerjacks. Make this recipe quick and easy in the Wolf Speed Oven. Add any other kind of nuts or goodies to the caramel corn to add a new twist.

Ingredients

  • 1 1/2 cups popcorn kernels
  • 1 tablespoon vegetable oil or popcorn oil
  • 2 lunch paper bags
  • 1 cup roasted peanuts
  • 2 cups sugar
  • 1/4 cup water
  • 1/8 teaspoon baking powder

Instructions

Place popcorn kernels in a small bowl and add oil. Mix well.

Separate the popcorn into the 2 bags evenly, folding the top 3 times to seal the bag.

Place the bags, one at a time, in the turn table of the Wolf Speed Oven. Cook on the regular-sized popcorn setting. Cook for about 3.5 minutes. Once completed, repeat with the second bag.

Place the popped popcorn onto a wire rack to separate the non-popped kernels from the popped ones. Add the popped popcorn to a bowl and reserve.

In a glass, microwave-safe measuring cup add 2 cups of sugar and 1/4 cup water. Combine until all of the sugar is damp.

Place the sugar mixture on the turntable in the Wolf Speed Oven. Select Power Level 5, set the time for 15½ minutes, and press Start.

The sugar mixture will become a light caramel once finished cooking. Pull the caramel from the Wolf Speed Oven and add the baking soda and peanuts. Stir briefly with a spoon and pour slowly over the popcorn. Use a rubber spatula to mix the popcorn. Let rest for 15 to 20 minutes. The popcorn will be very hot before resting, so be careful in handling it.

Store in a Ziploc bag for up to a week and enjoy.
