Homemade Lollipops
by: Chef Ed Richardson
Introduction
Homemade lollipops are a fun treat to make at home with a minimal level of work. Homemade lollipops require a candy thermometer and molds. Besides the thermometer, this recipe consists of basic household ingredients.
Ingredients
- 2 cups granulated sugar
- 1 cup light corn syrup
- 1/2 cup water
- food coloring
- flavor extract of choice
- lollipop sticks
- cooking spray
- lollipop molds
Instructions
Spray a silicone lollipop mold with cooking spray and place the lollipop sticks in the mold.
In a saucepan on the Wolf Burner, combine the sugar, corn syrup, and water over medium heat. Stir the mixture until the sugar dissolves.
Increase the heat to high and bring the mixture to a boil. Do not stir once the mixture starts to boil. Add the flavoring once the mixture reaches 260°F and continue to refrain from stirring.
Once the mixture reaches 280°F on a candy thermometer, add the food coloring. Do not stir.
Once the mixture hits 300°F, pour the mixture into the prepared molds, filling each cavity to the top.
Allow the suckers to cool and harden completely which will take approximately 20 minutes. Remove them from the molds once hardened.
Wrap each sucker in plastic wrap to keep them fresh.
