Roasted Red Pepper Hummus

Ingredients

  • 3 whole red peppers
  • 2 15-ounce cans of chickpeas, drained and rinsed
  • juice of 1 lemon
  • 4 cloves garlic
  • 1/2 cup tahini
  • 1 teaspoon cumin
  • salt and pepper to taste
  • 1/4 cup olive oil
  • 5 pieces of pita

Instructions

Place roasting rack over Wolf Gas Burner. Place the red peppers on Wolf Gas Burners and turn them on to char the skins of the peppers. Once charred, place the peppers in a bowl and cover them. Let them sit for a few minutes to steam, which will make peeling easier.

Peel the skin of the peppers and take out seeds.

In a food processor, combine the chickpeas, lemon juice, garlic, tahini, cumin, peeled red peppers, salt, pepper, and slowly add oilve oil.

Blend in the food processor until smooth. Add a tablespoon of water if needed to achieve the desired consistency.

Taste the hummus and adjust the seasoning as needed. You may want to add more salt or a bit more lemon juice.

Warm up and char pita on roasting rack over Wolf Gas Burner on low.

Transfer the hummus to a serving bowl and drizzle with a little olive oil.
