Introduction
Shakshuka is a popular Middle Eastern dish consisting of eggs poached in a spiced tomato sauce. It is often served with crunchy sliced bread for dipping.
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 jalapeno, seeded and diced
- 1 red bell pepper, chopped
- 2 teaspoons paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (14.5 ounces) diced tomatoes
- 4-6 eggs
- 1/4 cup chopped fresh parsley or cilantro, for garnish
Instructions
On a Wolf Burner, in a pot, heat the olive oil over medium heat. Add onions and peppers to the pot.
Add the garlic and stir frequently. Add tomatoes and spices to the mixture. Cook down the mixture for 20 minutes.
Using a spoon, create wells in the tomato sauce for the eggs. Crack an egg into each well.
Cover the skillet and cook until the eggs are set. This will take 5 to 7 minutes.
Remove the skillet from the heat and garnish with chopped parsley or cilantro.
