Southern Pulled Pork Shoulder

Introduction
Southern Style Pulled Pork typically takes about 8 to 10 hours to achieve the unique tenderness that sets the dish apart. The Wolf Legacy Convection Steam Oven drastically cuts that time by nearly 75% by utilizing a combination of moist and dry heat without sacrificing flavor or tenderness.

Ingredients
- 1 boneless Boston butt pork roast (6-8 pounds)
- about 3/4 cup dry rub (recipe below)
- southern-style sauce (recipe below)
Dry Rub
- 3 tablespoons smoked salt
- 2 tablespoons brown sugar
- 4 teaspoons black pepper
- 1 tablespoon cayenne
- 1 tablespoon dry mustard
- 1 tablespoon chili powder
- 1 tablespoon smoked paprika
- 1/2 teaspoon ground anise seed
- 1/2 teaspoon ground cumin seed
- 1/2 teaspoon ground celery seed
- 1/4 teaspoon ground coriander seed
Southern Style Sauce
- 1 cup cider vinegar
- 2/3 cup yellow prepared mustard
- 1/2 cup white sugar
- 1/4 cup brown sugar
- 2 tablespoons chili powder
- 1 teaspoon black pepper
- 1 teaspoon white pepper
- 4-5 drops Tabasco or other hot sauce
- 1/2 teaspoon soy sauce
- 2 tablespoons butter
Instructions
Combine all the dry rub ingredients and store in an airtight container.
For the pork, cut the shoulder into 4x4-inch pieces, about softball size, and rub all pieces with dry rub. Cover and refrigerate overnight.
Preheat the Wolf Legacy Convection Steam Oven on Convection Steam Mode set at 250°F. Line a solid pan with foil and place a roasting rack in the pan. Spray rack and foil with non-stick spray.
Place the pieces of pork on the rack and place in the Wolf Legacy Convection Steam Oven for 2 hours and 30 minutes. When cooking is complete, the pork should have some crispy edges but be very tender when touched with a fork. If it is not very tender, cook for 15 minutes more. Allow pork to cool, and shred with a fork. Remove any large sections of fat as the meat is shredded.
Add to a bun with extra sauce and coleslaw to make a pulled pork sandwich, serve directly over rice, serve as carnitas tacos, or however else is preferred.
